Combining the speed of a convection oven with the versatility of a steamer, this oven packs a powerful punch. The exterior is made of high quality stainless steel and comes complete with a dual pane tempered viewing window with hinged inner glass for convenient easy cleaning. The door has easily adjustable hinges and features a door mounted condensate trough. The inside of this combi oven is constructed with a fully welded stainless steel frame and fully insulated cooking chamber that is equipped with easily removable stainless steel side rails. This combi oven is designed with the standard controls: steam, combi, hot air and cool down. This Blodgett Combi Oven also features a steam on demand function and multiple speed reversing fan for even baking. The thermostat control heats the oven to 500 degrees and a dual stage door latch vents steam prior to the door being fully opened. If immediate steam release is needed, a cavity vent control can be activated with a switch. This combi oven offers an open vented system which condenses steam and drains away by-products of the cooking process, thereby eliminating flavor transfer. Instant steam recovery is possible due to the self-contained, self-flushing steam generator positioned separate from the cooking compartment. A prompt also alerts the user when deliming is necessary for the steam generator.
