Commercial Charbroilers are the perfect solution for bringing the much loved flavor and appearance of outdoor grilled foods – with the convenience of cooking indoors. Restaurant charbroilers are available in floor and countertop models and can operate with either natural gas or liquid propane. Choose from two heating methods; Radiant Heat or Char-Rock (Lava Rock). Radiant heat charbroilers emit heat directly from the burners to the cooking grate while lava rock/char-rock Charbroilers emit heat from the burners to charcoal/ceramic briquettes that transfer heat to the cooking grate. When using radiant heat, the gas flames heat the radiants and the heat is distributed evenly across the cooking surface. The angled radiants limit flare ups and are easier to clean. When heating with lava rocks, the gas heats the ceramic briquettes and simulates charcoal cooking as the fat of the meat drips on the briquettes – creating a smoky flavor. However, flare-ups are more common with this heating method and they can also be more difficult to clean. Not sure which heating method is right for you?
